With the patented guide on your Tormek knife sharpener you set the desired angle for your knife. Part of the guide is a plastic clamp that fixes the blade in place so that you get the same angle over the entire bevel. If the plastic clamp wears out over time, you can easily replace it with the EC-38 Exchange Clamp for Angle Guide.
The plastic on the guide may wear down a little, close to the diamond grinding wheel, during the first few sharpenings. This is perfectly normal and part of the break-in process. So if you have knives with thick blades, it’s a good idea to have two clamps: one for thin knives, and one for thicker knives.

The DWC-200 Diamond Wheel Coarse is a replacement grinding wheel, with a coarser grit, for the Tormek T-2 Pro Kitchen Knife Sharpener. It’s ideal if you have damaged knives and want to be able to remove a lot of material quickly to repair the edge. The DWC-200 Diamond Wheel Coarse is 360 grit.
